In general I have difficulties in determining the labels in the "double matrix method"! any tips that could help?

The first step is to recognize that you're dealing with a Double Matrix question. Some keywords that suggest we have this question type include BOTH and NEITHER.
The next step is to determine whether we're dealing with exactly two different characteristics.
Regarding labels: In most cases, the labels will be in the form X and NOT X.
For example, ENGINEER and NOT ENGINEER, LEFT-HANDED and NOT LEFT-HANDED (aka right-handed)
